Red Lentil Soup (Low in Salicylate)
10 cups water
2 cups red lentils (1 packet)
2 Tablespoons white rice
2 Swedes, peeled and chopped
1 cup celery, chopped
1 cup leeks, chopped
¼ cup chives, chopped
1 cup cabbage, chopped
1-4 gloves garlic, crushed
6 brussel sprouts, halved (optional)
Combine water, lentils and rice in pot and bring to a boil.
Add all other ingredients and reduce heat.
Simmer for at least 30 min. or until thoroughly cooked.
Enjoy!
PS - the leftovers make a great lunch!
