Banana Pancakes (Salicylate Free)

2 cups flour

4 teaspoons baking powder

½ teaspoon salt

2 Tablespoons sugar

1 and ¾ cup milk

2 eggs, beaten

2 Tablespoons melted butter

1 cup mashed banana (about 3 medium bananas)

Preheat griddle or frying pan.

Combine flour, baking powder, salt, and sugar together.

In a separate bowl, mix milk, melted butter and eggs together.

Gently mix the wet ingredients into the dry ingredients.

Fold in the mashed bananas just before frying.

Cook on a hot griddle or frying pan until golden brown on both sides.

NOTE: Bananas are low in salicylate but they do contain amines so if you are amine intolerant then you should avoid them.
